Delmonte Fruit Why can't I cut fruit up when canning?
The instructions I've seen for canning fruit (peaches in particular) say that you should cut them in halves and no further. But certain peaches are too big to fit into my jars if I don't cut them up into quarters or eighths. Moreover, I don't understand why DelMonte can do it when they can and I can't. What is the rationale behind this? Is it acceptable to cut them into the same type of slices you get in canned peaches in the store? Any recommendations?
You can cut them up more, it's just that for a better quality you shouldn't. Cutting them exposes more of their surface area, which in turn will diminish the integrity of the fruit. It will make them more mushy when you cook them and as they set in the jars until use. If you don't mind that then go for it.
